Ingredients
- Brown rice - 1 cup
- Water - 4 cups
- Chicken breast - 200 grams, diced
- Tofu - 150 grams, cubed
- Mushrooms (shiitake or button) - 100 grams, sliced
- Korean radish - 100 grams, diced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the brown rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, add the soaked brown rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes until the rice is tender.
- In another pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Add diced chicken breast to the pan and cook until browned, about 5-7 minutes. Then add the diced Korean radish and sliced mushrooms, cooking for another 5 minutes.
- Pour in the soy sauce and sprinkle with salt and black pepper to taste. Stir well and let it simmer for an additional 5 minutes.
- Once the rice is cooked, combine it with the chicken and vegetable mixture in the pot. Adjust seasoning if necessary and let it cook together for another 2-3 minutes.
- Serve hot, garnished with chopped green onions.
