Ingredients

  • Brown rice - 1 cup
  • Water - 4 cups
  • Chicken breast - 200 grams, diced
  • Tofu - 150 grams, cubed
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Korean radish - 100 grams, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, add the soaked brown rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes until the rice is tender.
  3. In another pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  4. Add diced chicken breast to the pan and cook until browned, about 5-7 minutes. Then add the diced Korean radish and sliced mushrooms, cooking for another 5 minutes.
  5. Pour in the soy sauce and sprinkle with salt and black pepper to taste. Stir well and let it simmer for an additional 5 minutes.
  6. Once the rice is cooked, combine it with the chicken and vegetable mixture in the pot. Adjust seasoning if necessary and let it cook together for another 2-3 minutes.
  7. Serve hot, garnished with chopped green onions.
