Ingredients
- Water - 1 liter
- Dried anchovies - 10 pieces
- Daikon radish - 100 grams, sliced
- Zucchini - 100 grams, diced
- Mushrooms (shiitake or enoki) - 50 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Green onion - 2 stalks, chopped
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, combine 1 liter of water and dried anchovies. Bring to a boil over medium heat and simmer for 10 minutes to create a broth.
- Remove the anchovies from the broth and discard them. Add the sliced daikon radish and continue to simmer for another 10 minutes.
- Stir in the diced zucchini, sliced mushrooms, and minced garlic. Cook for an additional 5 minutes until the vegetables are tender.
- Add soy sauce, sesame oil, salt, and pepper to taste. Remove from heat and stir in the chopped green onion.
- Serve hot in bowls, garnished with additional green onions if desired.
