Ingredients

  • Water - 1 liter
  • Dried anchovies - 10 pieces
  • Daikon radish - 100 grams, sliced
  • Zucchini - 100 grams, diced
  • Mushrooms (shiitake or enoki) - 50 grams, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onion - 2 stalks, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, combine 1 liter of water and dried anchovies. Bring to a boil over medium heat and simmer for 10 minutes to create a broth.
  2. Remove the anchovies from the broth and discard them. Add the sliced daikon radish and continue to simmer for another 10 minutes.
  3. Stir in the diced zucchini, sliced mushrooms, and minced garlic. Cook for an additional 5 minutes until the vegetables are tender.
  4. Add soy sauce, sesame oil, salt, and pepper to taste. Remove from heat and stir in the chopped green onion.
  5. Serve hot in bowls, garnished with additional green onions if desired.
