Sobaek Bap

Ingredients
- Short-grain rice - 1 cup (200g)
- Water - 1.5 cups (375ml)
- Carrot - 1 small (50g), julienned
- Zucchini - 1 small (100g), julienned
- Mushrooms (shiitake or button) - 100g, sliced
- Soy sauce (Halal) - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (optional) for garnish
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, bring 1.5 cups of water to a boil, then add the soaked rice. Cover and reduce the heat to low, cooking for about 15 minutes, or until the water is absorbed and the rice is tender.
- While the rice is cooking, heat a large skillet over medium heat and add sesame oil.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Add the julienned carrot, zucchini, and sliced mushrooms to the skillet, and stir-fry for about 5-7 minutes until the vegetables are tender.
- Stir in the soy sauce, black pepper, and chopped green onions, cooking for an additional 2 minutes.
- Once the rice is cooked, fluff it with a fork and mix it with the sautéed vegetables in the skillet. Adjust seasoning with salt and pepper to taste.
- Serve hot, garnished with sesame seeds if desired.
