Sobaek Bap

Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 1.5 cups (375ml)
  • Carrot - 1 small (50g), julienned
  • Zucchini - 1 small (100g), julienned
  • Mushrooms (shiitake or button) - 100g, sliced
  • Soy sauce (Halal) - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (optional) for garnish

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, bring 1.5 cups of water to a boil, then add the soaked rice. Cover and reduce the heat to low, cooking for about 15 minutes, or until the water is absorbed and the rice is tender.
  3. While the rice is cooking, heat a large skillet over medium heat and add sesame oil.
  4. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Add the julienned carrot, zucchini, and sliced mushrooms to the skillet, and stir-fry for about 5-7 minutes until the vegetables are tender.
  6. Stir in the soy sauce, black pepper, and chopped green onions, cooking for an additional 2 minutes.
  7. Once the rice is cooked, fluff it with a fork and mix it with the sautéed vegetables in the skillet. Adjust seasoning with salt and pepper to taste.
  8. Serve hot, garnished with sesame seeds if desired.
