- Soba noodles - 150 grams
- Water - 1 liter
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Carrot - 1 medium, julienned
- Spinach - 100 grams, fresh
- Sesame seeds - 1 tablespoon, toasted
- Chili flakes - 1 teaspoon (optional)
Steps
- Bring 1 liter of water to a boil in a medium pot. Add the soba noodles and cook according to package instructions, usually around 4-5 minutes.
- While the noodles are cooking, heat a large skillet over medium heat and add the sesame oil.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the julienned carrot and cook for 2-3 minutes until slightly softened.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
- Add the drained soba noodles to the skillet with the vegetables and pour in the soy sauce. Toss everything together until well combined.
- Serve the soba noodles hot, garnished with chopped green onions, toasted sesame seeds, and chili flakes if desired.
