Ingredients

  • Soba noodles - 150 grams
  • Water - 1 liter
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams, fresh
  • Sesame seeds - 1 tablespoon, toasted
  • Chili flakes - 1 teaspoon (optional)

Steps

  1. Bring 1 liter of water to a boil in a medium pot. Add the soba noodles and cook according to package instructions, usually around 4-5 minutes.
  2. While the noodles are cooking, heat a large skillet over medium heat and add the sesame oil.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the julienned carrot and cook for 2-3 minutes until slightly softened.
  5. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  6. Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
  7. Add the drained soba noodles to the skillet with the vegetables and pour in the soy sauce. Toss everything together until well combined.
  8. Serve the soba noodles hot, garnished with chopped green onions, toasted sesame seeds, and chili flakes if desired.
