Ingredients
- Sweet rice (glutinous rice) - 100 grams
- Barley malt powder - 30 grams
- Water - 1.5 liters
- Honey or sugar - 30 grams
- Salt - a pinch
- Dried fruit (e.g., jujubes or raisins) - 30 grams
- Sesame seeds - 10 grams
Steps
- Rinse the sweet rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked rice and place it in a pot with 1 liter of water. Cook it over medium heat, stirring occasionally until the rice is soft and has absorbed most of the water, about 20 minutes.
- Once the rice is cooked, add the remaining 0.5 liters of water to the pot and bring the mixture to a boil.
- Remove the pot from the heat and allow it to cool slightly. Then, using a blender or a food processor, blend the mixture until smooth.
- In a separate bowl, mix the barley malt powder with a small amount of warm water to dissolve it, then add it to the blended rice mixture along with honey or sugar and a pinch of salt. Stir well to combine.
- Let the mixture cool to room temperature, then refrigerate for at least 1 hour until chilled.
- Before serving, stir the sikye and pour it into bowls or cups. Top with dried fruit and sprinkle with sesame seeds.
