Ingredients

  • Sweet rice (glutinous rice) - 100 grams
  • Barley malt powder - 30 grams
  • Water - 1.5 liters
  • Honey or sugar - 30 grams
  • Salt - a pinch
  • Dried fruit (e.g., jujubes or raisins) - 30 grams
  • Sesame seeds - 10 grams

Steps

  1. Rinse the sweet rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and place it in a pot with 1 liter of water. Cook it over medium heat, stirring occasionally until the rice is soft and has absorbed most of the water, about 20 minutes.
  3. Once the rice is cooked, add the remaining 0.5 liters of water to the pot and bring the mixture to a boil.
  4. Remove the pot from the heat and allow it to cool slightly. Then, using a blender or a food processor, blend the mixture until smooth.
  5. In a separate bowl, mix the barley malt powder with a small amount of warm water to dissolve it, then add it to the blended rice mixture along with honey or sugar and a pinch of salt. Stir well to combine.
  6. Let the mixture cool to room temperature, then refrigerate for at least 1 hour until chilled.
  7. Before serving, stir the sikye and pour it into bowls or cups. Top with dried fruit and sprinkle with sesame seeds.
