Sikhye Rice

Sikhye is a traditional Korean sweet rice drink that is not only refreshing but also packed with unique flavors from fermented rice and spices. This healthy dish is perfect for a light dessert or a revitalizing beverage.

Ingredients

  • Sweet rice (glutinous rice) - 100 grams
  • Water - 1 liter
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Barley malt powder - 2 tablespoons
  • Ginger - 1 slice (about 1 cm thick)
  • Pine nuts - 1 tablespoon (optional for garnish)

Steps

  1. Rinse the sweet rice in cold water until the water runs clear, then soak it in water for at least 2 hours or overnight.
  2. After soaking, drain the rice and place it in a pot with 1 liter of fresh water. Bring it to a boil, then reduce the heat to low and cover, cooking for about 30 minutes until the rice is soft.
  3. Once cooked, remove from heat and let it cool slightly. Then, transfer the rice and water to a large bowl.
  4. Add the barley malt powder and sugar to the rice mixture. Stir well until the sugar dissolves completely.
  5. Add a slice of ginger and a pinch of salt to the mixture. Cover the bowl with a clean cloth and let it sit at room temperature for about 1-2 hours to ferment slightly.
  6. After fermenting, strain the mixture through a fine sieve or cheesecloth into another bowl, discarding the solids.
  7. Chill the strained Sikhye in the refrigerator for at least 30 minutes before serving.
  8. Serve in glasses, garnished with pine nuts if desired.
