Sikhye Rice
Sikhye is a traditional Korean sweet rice drink that is not only refreshing but also packed with unique flavors from fermented rice and spices. This healthy dish is perfect for a light dessert or a revitalizing beverage.

Ingredients
- Sweet rice (glutinous rice) - 100 grams
- Water - 1 liter
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Barley malt powder - 2 tablespoons
- Ginger - 1 slice (about 1 cm thick)
- Pine nuts - 1 tablespoon (optional for garnish)
Steps
- Rinse the sweet rice in cold water until the water runs clear, then soak it in water for at least 2 hours or overnight.
- After soaking, drain the rice and place it in a pot with 1 liter of fresh water. Bring it to a boil, then reduce the heat to low and cover, cooking for about 30 minutes until the rice is soft.
- Once cooked, remove from heat and let it cool slightly. Then, transfer the rice and water to a large bowl.
- Add the barley malt powder and sugar to the rice mixture. Stir well until the sugar dissolves completely.
- Add a slice of ginger and a pinch of salt to the mixture. Cover the bowl with a clean cloth and let it sit at room temperature for about 1-2 hours to ferment slightly.
- After fermenting, strain the mixture through a fine sieve or cheesecloth into another bowl, discarding the solids.
- Chill the strained Sikhye in the refrigerator for at least 30 minutes before serving.
- Serve in glasses, garnished with pine nuts if desired.
