Ingredients

  • Brown rice - 1 cup (200g)
  • Water - 3 cups (720ml)
  • Barley malt powder - 3 tablespoons (45g)
  • Honey or maple syrup - 2 tablespoons (30g)
  • Salt - 1/2 teaspoon (3g)
  • Chopped almonds - 2 tablespoons (15g)
  • Chopped dried fruits (such as apricots or raisins) - 1/4 cup (40g)
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a pot, combine soaked brown rice with 3 cups of fresh water and bring it to a boil.
  3. Once boiling, reduce the heat to low and cover the pot. Cook for about 40 minutes, or until the rice is tender and the water is absorbed.
  4. In a separate bowl, mix the barley malt powder, honey (or maple syrup), and salt with 1 cup of warm water until well combined.
  5. Once the rice is cooked, remove it from heat and let it cool slightly. Then, mix in the barley malt mixture until evenly coated.
  6. Serve the rice in bowls, topped with chopped almonds and dried fruits. Garnish with fresh mint leaves for added flavor.
