Ingredients
- Brown rice - 1 cup (200g)
- Water - 3 cups (720ml)
- Barley malt powder - 3 tablespoons (45g)
- Honey or maple syrup - 2 tablespoons (30g)
- Salt - 1/2 teaspoon (3g)
- Chopped almonds - 2 tablespoons (15g)
- Chopped dried fruits (such as apricots or raisins) - 1/4 cup (40g)
- Fresh mint leaves - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- In a pot, combine soaked brown rice with 3 cups of fresh water and bring it to a boil.
- Once boiling, reduce the heat to low and cover the pot. Cook for about 40 minutes, or until the rice is tender and the water is absorbed.
- In a separate bowl, mix the barley malt powder, honey (or maple syrup), and salt with 1 cup of warm water until well combined.
- Once the rice is cooked, remove it from heat and let it cool slightly. Then, mix in the barley malt mixture until evenly coated.
- Serve the rice in bowls, topped with chopped almonds and dried fruits. Garnish with fresh mint leaves for added flavor.
