Ingredients

  • Sweet rice (glutinous rice) - 100 grams
  • Water - 1 liter
  • Malted barley powder - 50 grams
  • Sugar - 2 tablespoons (30 grams)
  • Salt - a pinch
  • Pine nuts - 1 tablespoon (optional)
  • Dried fruit (such as jujube or raisins) - 2 tablespoons (optional)

Steps

  1. Rinse the sweet rice under cold water until the water runs clear, then soak it in water for at least 2 hours or overnight.
  2. Drain the soaked rice and steam it in a steamer basket lined with cheesecloth or a clean kitchen towel for about 30 minutes, until the grains are translucent and tender.
  3. While the rice is steaming, combine 1 liter of water and the malted barley powder in a large pot. Bring to a boil, then reduce to a simmer for 10 minutes, stirring occasionally.
  4. Once the rice is cooked, add it to the barley water and stir well. Add sugar and a pinch of salt, then simmer for an additional 10 minutes.
  5. Remove from heat and let the mixture cool to room temperature. As it cools, it will begin to ferment slightly, producing a natural sweetness.
  6. Once cooled, strain the Sikhye through a fine mesh sieve or cheesecloth into a clean container, discarding the barley solids.
  7. Serve chilled, garnished with pine nuts and dried fruit if desired.
