Ingredients
- Sweet rice (glutinous rice) - 100 grams
- Water - 1 liter
- Malted barley powder - 50 grams
- Sugar - 2 tablespoons (30 grams)
- Salt - a pinch
- Pine nuts - 1 tablespoon (optional)
- Dried fruit (such as jujube or raisins) - 2 tablespoons (optional)
Steps
- Rinse the sweet rice under cold water until the water runs clear, then soak it in water for at least 2 hours or overnight.
- Drain the soaked rice and steam it in a steamer basket lined with cheesecloth or a clean kitchen towel for about 30 minutes, until the grains are translucent and tender.
- While the rice is steaming, combine 1 liter of water and the malted barley powder in a large pot. Bring to a boil, then reduce to a simmer for 10 minutes, stirring occasionally.
- Once the rice is cooked, add it to the barley water and stir well. Add sugar and a pinch of salt, then simmer for an additional 10 minutes.
- Remove from heat and let the mixture cool to room temperature. As it cools, it will begin to ferment slightly, producing a natural sweetness.
- Once cooled, strain the Sikhye through a fine mesh sieve or cheesecloth into a clean container, discarding the barley solids.
- Serve chilled, garnished with pine nuts and dried fruit if desired.
