Ingredients

  • Cooked short-grain rice - 1 cup
  • Water - 1/2 cup
  • Salt - 1 tsp
  • Korean chili flakes (gochugaru) - 1 tsp
  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Radish (daikon) - 100 grams, julienned
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tbsp
  • Soy sauce - 1 tbsp
  • Rice vinegar - 1 tbsp
  • Sesame seeds - 1 tsp

Steps

  1. In a bowl, mix the cooked short-grain rice with water, salt, and Korean chili flakes. Let it sit for 15-20 minutes to slightly ferment.
  2. While the rice is fermenting, prepare the vegetables: slice the cucumber, julienne the carrot and radish, and chop the green onion.
  3. After 20 minutes, drain any excess water from the rice and transfer it to a large mixing bowl.
  4. Add the sliced cucumber, julienned carrot, radish, and chopped green onion to the bowl with the rice.
  5. In a small bowl, whisk together the sesame oil, soy sauce, and rice vinegar. Pour this dressing over the salad and toss gently to combine.
  6. Sprinkle with sesame seeds and serve immediately, or chill for 10 minutes for a refreshing touch.
