- Cooked short-grain rice - 1 cup
- Water - 1/2 cup
- Salt - 1 tsp
- Korean chili flakes (gochugaru) - 1 tsp
- Cucumber - 1 medium, thinly sliced
- Carrot - 1 medium, julienned
- Radish (daikon) - 100 grams, julienned
- Green onion - 2 stalks, chopped
- Sesame oil - 1 tbsp
- Soy sauce - 1 tbsp
- Rice vinegar - 1 tbsp
- Sesame seeds - 1 tsp
Steps
- In a bowl, mix the cooked short-grain rice with water, salt, and Korean chili flakes. Let it sit for 15-20 minutes to slightly ferment.
- While the rice is fermenting, prepare the vegetables: slice the cucumber, julienne the carrot and radish, and chop the green onion.
- After 20 minutes, drain any excess water from the rice and transfer it to a large mixing bowl.
- Add the sliced cucumber, julienned carrot, radish, and chopped green onion to the bowl with the rice.
- In a small bowl, whisk together the sesame oil, soy sauce, and rice vinegar. Pour this dressing over the salad and toss gently to combine.
- Sprinkle with sesame seeds and serve immediately, or chill for 10 minutes for a refreshing touch.
