Ingredients

  • Short-grain rice - 100 grams
  • Water - 1 liter
  • Dried anchovies - 20 grams
  • Seaweed (kelp) - 10 grams
  • Shrimp (peeled and deveined) - 100 grams
  • Squid (cleaned and sliced) - 100 grams
  • Mussels (cleaned) - 100 grams
  • Garlic (minced) - 2 cloves
  • Ginger (minced) - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onion (chopped) - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes and drain.
  2. In a large pot, combine 1 liter of water, dried anchovies, and seaweed. Bring to a boil over medium heat, then lower to a simmer for 10 minutes to create a seafood broth.
  3. Remove the anchovies and seaweed from the broth. Add the soaked rice to the pot and continue to simmer, stirring occasionally, for about 15 minutes until the rice is soft and the mixture has thickened.
  4. In a separate pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).
  5. Add the shrimp, squid, and mussels to the pan, cooking until the seafood is just cooked through (about 3-5 minutes).
  6. Stir the seafood mixture into the rice porridge, add soy sauce, and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  7. Serve hot, garnished with chopped green onions.
