Sikhae

Sikhae is a traditional Korean fermented dish made from glutinous rice and rich in protein, perfect for a nutritious dinner. This dish offers a delightful combination of tangy flavors and a unique texture, making it both satisfying and healthy.

Ingredients

  • Glutinous rice - 200 grams
  • Water - 500 milliliters
  • Dried pollock (or any white fish) - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a steamer for about 30 minutes until cooked through.
  3. While the rice is steaming, prepare the dried pollock by soaking it in water for 15 minutes, then drain and chop into small pieces.
  4. In a bowl, combine the chopped pollock with soy sauce, sesame oil, salt, ginger, garlic, and mix well.
  5. Once the rice is done steaming, allow it to cool slightly before mixing it with the pollock mixture, ensuring an even distribution.
  6. Transfer the mixture to a clean glass jar, pressing it down gently but firmly to remove air pockets, and seal the jar.
  7. Leave the jar at room temperature for 2-3 days to ferment, checking daily for taste and texture.
  8. Once fermented to your liking, refrigerate the Sikhae for up to 1 week. Serve chilled, garnished with chopped green onions and sesame seeds.
