Sikhae
Sikhae is a traditional Korean fermented dish made from glutinous rice and rich in protein, perfect for a nutritious dinner. This dish offers a delightful combination of tangy flavors and a unique texture, making it both satisfying and healthy.

Ingredients
- Glutinous rice - 200 grams
- Water - 500 milliliters
- Dried pollock (or any white fish) - 100 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a steamer for about 30 minutes until cooked through.
- While the rice is steaming, prepare the dried pollock by soaking it in water for 15 minutes, then drain and chop into small pieces.
- In a bowl, combine the chopped pollock with soy sauce, sesame oil, salt, ginger, garlic, and mix well.
- Once the rice is done steaming, allow it to cool slightly before mixing it with the pollock mixture, ensuring an even distribution.
- Transfer the mixture to a clean glass jar, pressing it down gently but firmly to remove air pockets, and seal the jar.
- Leave the jar at room temperature for 2-3 days to ferment, checking daily for taste and texture.
- Once fermented to your liking, refrigerate the Sikhae for up to 1 week. Serve chilled, garnished with chopped green onions and sesame seeds.
