Ingredients
- Fresh spinach - 200 grams
- Firm tofu - 100 grams
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Wash the fresh spinach thoroughly under cold water and drain.
- In a pot, bring water to a boil and blanch the spinach for about 1 minute until wilted. Drain and rinse under cold water to stop the cooking process, then squeeze out excess water and chop coarsely.
- While the spinach is cooling, cut the firm tofu into small cubes.
- Heat a non-stick skillet over medium heat and add a splash of sesame oil. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes.
- Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- In a large bowl, combine the blanched spinach, sautéed tofu, remaining sesame oil, soy sauce, sesame seeds, salt, and pepper. Toss gently to combine.
- Serve immediately as a side dish or as part of a breakfast bowl.
