Ingredients

  • Fresh spinach - 200 grams
  • Firm tofu - 100 grams
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Wash the fresh spinach thoroughly under cold water and drain.
  2. In a pot, bring water to a boil and blanch the spinach for about 1 minute until wilted. Drain and rinse under cold water to stop the cooking process, then squeeze out excess water and chop coarsely.
  3. While the spinach is cooling, cut the firm tofu into small cubes.
  4. Heat a non-stick skillet over medium heat and add a splash of sesame oil. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes.
  5. Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  6. In a large bowl, combine the blanched spinach, sautéed tofu, remaining sesame oil, soy sauce, sesame seeds, salt, and pepper. Toss gently to combine.
  7. Serve immediately as a side dish or as part of a breakfast bowl.
