Ingredients

  • Fresh spinach - 200 grams
  • Cauliflower rice - 200 grams
  • Chicken broth - 500 ml
  • Garlic - 3 cloves, minced
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onion - 1, chopped (for garnish)

Steps

  1. Rinse the fresh spinach under cold water and set aside.
  2. In a medium pot, heat sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the cauliflower rice to the pot and stir-fry for about 3-4 minutes until slightly tender.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Once boiling, reduce the heat and add the spinach, cooking until wilted, about 2-3 minutes.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and let cool slightly before serving.
  8. Ladle the porridge into bowls and garnish with chopped green onion.
