- Fresh spinach - 200 grams
- Cauliflower rice - 200 grams
- Chicken broth - 500 ml
- Garlic - 3 cloves, minced
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onion - 1, chopped (for garnish)
Steps
- Rinse the fresh spinach under cold water and set aside.
- In a medium pot, heat sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the cauliflower rice to the pot and stir-fry for about 3-4 minutes until slightly tender.
- Pour in the chicken broth and bring to a gentle boil.
- Once boiling, reduce the heat and add the spinach, cooking until wilted, about 2-3 minutes.
- Season with salt and black pepper to taste.
- Remove from heat and let cool slightly before serving.
- Ladle the porridge into bowls and garnish with chopped green onion.
