Ingredients

  • Fresh spinach - 150 grams
  • Cooked quinoa - 100 grams
  • Sesame seeds - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, finely chopped
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Bread crumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Gochujang (Korean chili paste) - 1 tablespoon

Steps

  1. In a small bowl, combine ground flaxseed and water. Let it sit for about 5 minutes to thicken.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the cooked quinoa, sautéed spinach, chopped green onion, soy sauce, sesame seeds, salt, black pepper, and the flaxseed mixture. Mix until well combined.
  5. Gradually add bread crumbs to the mixture until it holds together but is still moist.
  6. Form the mixture into 2 equal-sized patties.
  7. In the same skillet, add a little more olive oil if needed, and cook the patties over medium heat for about 4-5 minutes on each side, until golden brown.
  8. To assemble the burgers, place each patty on a whole grain bun, topped with lettuce, sliced tomato, and cucumber. Add a dollop of gochujang sauce on top.
