Ingredients
- Fresh spinach - 150 grams
- Cooked quinoa - 100 grams
- Sesame seeds - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, finely chopped
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Bread crumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2, sliced
- Gochujang (Korean chili paste) - 1 tablespoon
Steps
- In a small bowl, combine ground flaxseed and water. Let it sit for about 5 minutes to thicken.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked quinoa, sautéed spinach, chopped green onion, soy sauce, sesame seeds, salt, black pepper, and the flaxseed mixture. Mix until well combined.
- Gradually add bread crumbs to the mixture until it holds together but is still moist.
- Form the mixture into 2 equal-sized patties.
- In the same skillet, add a little more olive oil if needed, and cook the patties over medium heat for about 4-5 minutes on each side, until golden brown.
- To assemble the burgers, place each patty on a whole grain bun, topped with lettuce, sliced tomato, and cucumber. Add a dollop of gochujang sauce on top.
