Ingredients

  • Beef shank - 300 grams
  • Beef bones (preferably leg bones) - 500 grams
  • Water - 2 liters
  • Garlic - 4 cloves, minced
  • Salt - 1 teaspoon (to taste)
  • Black pepper - 1/2 teaspoon
  • Green onions - 2 stalks, chopped
  • Rice (cooked) - 1 cup
  • Sesame oil - 1 tablespoon (optional for serving)

Steps

  1. In a large pot, add the beef bones and cover them with cold water. Bring to a boil over high heat and boil for 5 minutes to remove impurities.
  2. Drain the bones and rinse them under cold water. Return the bones and the beef shank to the pot, then add 2 liters of fresh water.
  3. Bring the pot to a boil again, then reduce the heat to low, cover, and simmer for at least 3 hours. Skim off any foam or fat that rises to the surface.
  4. After 3 hours, add the minced garlic, salt, and black pepper to the pot. Continue to simmer for another 30 minutes.
  5. Remove the beef shank and bones from the broth. Shred the beef shank into bite-sized pieces and return it to the soup, discarding the bones.
  6. Taste the broth and adjust seasoning if necessary. Serve hot over cooked rice and garnish with chopped green onions and a drizzle of sesame oil, if desired.
