Ingredients
- Beef shank - 300 grams
- Beef bones (preferably leg bones) - 500 grams
- Water - 2 liters
- Garlic - 4 cloves, minced
- Salt - 1 teaspoon (to taste)
- Black pepper - 1/2 teaspoon
- Green onions - 2 stalks, chopped
- Rice (cooked) - 1 cup
- Sesame oil - 1 tablespoon (optional for serving)
Steps
- In a large pot, add the beef bones and cover them with cold water. Bring to a boil over high heat and boil for 5 minutes to remove impurities.
- Drain the bones and rinse them under cold water. Return the bones and the beef shank to the pot, then add 2 liters of fresh water.
- Bring the pot to a boil again, then reduce the heat to low, cover, and simmer for at least 3 hours. Skim off any foam or fat that rises to the surface.
- After 3 hours, add the minced garlic, salt, and black pepper to the pot. Continue to simmer for another 30 minutes.
- Remove the beef shank and bones from the broth. Shred the beef shank into bite-sized pieces and return it to the soup, discarding the bones.
- Taste the broth and adjust seasoning if necessary. Serve hot over cooked rice and garnish with chopped green onions and a drizzle of sesame oil, if desired.
