Ingredients

  • panko breadcrumbs - 1 cup
  • all-purpose flour - 1/4 cup
  • plant-based milk - 1/2 cup
  • soy sauce - 2 tablespoons
  • gochujang (Korean chili paste) - 1 tablespoon
  • garlic powder - 1 teaspoon
  • ginger powder - 1 teaspoon
  • sesame oil - 1 tablespoon
  • burger buns - 2
  • shredded cabbage - 1 cup
  • sliced cucumber - 1/2 cup
  • sliced avocado - 1/2
  • vegan mayonnaise - 2 tablespoons
  • rice vinegar - 1 tablespoon
  • salt - to taste
  • pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the plant-based milk, soy sauce, gochujang, garlic powder, ginger powder, sesame oil, salt, and pepper to create a marinade.
  3. Slice the seitan into 1 cm thick patties and marinate them in the mixture for at least 10 minutes.
  4. Prepare three separate bowls: one with all-purpose flour, one with the remaining marinade, and one with panko breadcrumbs.
  5. Coat each marinated seitan patty first in flour, then dip into the marinade again, and finally coat with panko breadcrumbs.
  6. Place the breaded patties on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  7. In a small bowl, mix vegan mayonnaise with rice vinegar to create a tangy sauce.
  8. Assemble the burgers by spreading the sauce on the bottom bun, adding a crispy seitan patty, and topping it with shredded cabbage, cucumber slices, and avocado.
  9. Top with the other half of the bun and serve immediately.
