- Cooked quinoa - 100 grams
- Tofu (firm) - 100 grams, cubed
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Avocado - 1 medium, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Roasted sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Prepare the sushi rice according to package instructions and let it cool.
- In a bowl, mix the cooked sushi rice and quinoa with sesame oil, salt, and pepper to taste.
- In a skillet, lightly sauté the cubed tofu until golden brown, about 5-7 minutes.
- Lay a nori sheet on a bamboo sushi mat or clean surface, shiny side down.
- Spread a thin layer of the rice and quinoa mixture over the nori, leaving a 2 cm border at the top.
- Arrange cucumber, carrot, avocado, and sautéed tofu evenly across the rice.
- Using the mat, roll the nori tightly away from you, pressing gently to form a log shape.
- Seal the edge of the nori with a little water to hold it together.
- Repeat the process with the remaining nori sheets and fillings.
- Slice each roll into bite-sized pieces and sprinkle with roasted sesame seeds.
- Serve with soy sauce on the side for dipping.
