Ingredients

  • Nori sheets - 4 sheets
  • Cooked sushi rice - 200 grams
  • Cooked quinoa - 100 grams
  • Tofu (firm) - 100 grams, cubed
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Avocado - 1 medium, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Roasted sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the sushi rice according to package instructions and let it cool.
  2. In a bowl, mix the cooked sushi rice and quinoa with sesame oil, salt, and pepper to taste.
  3. In a skillet, lightly sauté the cubed tofu until golden brown, about 5-7 minutes.
  4. Lay a nori sheet on a bamboo sushi mat or clean surface, shiny side down.
  5. Spread a thin layer of the rice and quinoa mixture over the nori, leaving a 2 cm border at the top.
  6. Arrange cucumber, carrot, avocado, and sautéed tofu evenly across the rice.
  7. Using the mat, roll the nori tightly away from you, pressing gently to form a log shape.
  8. Seal the edge of the nori with a little water to hold it together.
  9. Repeat the process with the remaining nori sheets and fillings.
  10. Slice each roll into bite-sized pieces and sprinkle with roasted sesame seeds.
  11. Serve with soy sauce on the side for dipping.
