Ingredients

  • Brown rice - 100 grams
  • Nori seaweed sheets - 2 sheets
  • Quinoa - 50 grams
  • Sesame seeds - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 200 ml

Steps

  1. Rinse the brown rice and quinoa under cold water until the water runs clear, then soak them together in water for 30 minutes.
  2. Drain the rice and quinoa, then combine them in a pot with 200 ml of fresh water. Bring to a boil, then reduce to a simmer, cover, and cook for about 20 minutes or until the grains are tender and the water is absorbed.
  3. While the rice and quinoa are cooking, preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  4. Once the rice and quinoa are cooked, transfer them to a large bowl and let them cool slightly. Then, add the soy sauce, olive oil, garlic powder, and salt. Mix well until everything is evenly combined.
  5. Tear the nori sheets into small pieces and fold them into the rice mixture along with the sesame seeds. Stir until the nori is well incorporated.
  6. Spread the mixture evenly onto the lined baking sheet, pressing it down firmly to create an even layer about 0.5 cm thick.
  7. Bake in the preheated oven for 15-20 minutes or until the edges are golden and the mixture feels firm.
  8. Remove from the oven and let it cool completely. Once cooled, break into cracker-sized pieces and enjoy!
