Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 1 1/4 cups (300ml)
  • Dried seaweed (nori) - 4 sheets
  • Cooked chicken breast (shredded) - 100g
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Green onions (finely chopped) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black sesame seeds - 1 tablespoon
  • Sesame seeds - 1 tablespoon

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then drain it well.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  3. Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes to steam.
  4. In a mixing bowl, combine the cooked rice, shredded chicken, soy sauce, sesame oil, chopped green onions, and salt. Mix gently until well combined, allowing the flavors to meld.
  5. Place a sheet of nori on a clean surface. Wet your hands to prevent sticking, then take a small handful of the rice mixture and shape it into a triangle or ball. Place the shaped rice on the nori sheet.
  6. Fold the nori over the rice ball, pressing gently to seal it. Repeat with the remaining rice mixture and nori sheets.
  7. Sprinkle the black sesame seeds and sesame seeds over the rice balls before serving.
