Ingredients

  • Short-grain rice - 150 grams
  • Water - 300 ml
  • Dried seaweed (wakame) - 10 grams
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Spinach - 100 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Rice vinegar - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onion - 1, sliced
  • Salt - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, bring 300 ml of water to a boil, add the soaked rice, cover, and reduce the heat to low. Cook for 15 minutes, then remove from heat and let it sit for another 10 minutes.
  3. While the rice is cooking, soak the dried seaweed in warm water for about 10 minutes until rehydrated. Drain and set aside.
  4. In a pan, heat sesame oil over medium heat. Add the julienned carrot and zucchini, sautéing for about 3-4 minutes until tender. Season with a pinch of salt.
  5. Blanch the spinach in boiling water for 1-2 minutes until wilted, then drain and squeeze out excess water. Season with soy sauce and set aside.
  6. In a small bowl, mix gochujang with rice vinegar to create a sauce.
  7. To serve, divide the cooked rice into two bowls. Arrange the sautéed vegetables, spinach, and rehydrated seaweed on top of the rice in sections, creating a colorful presentation.
  8. Drizzle the gochujang sauce over the top and sprinkle with sesame seeds and green onion. Serve immediately, mixing everything together before eating.
