Ingredients

  • Fresh spinach - 200 grams
  • Garlic - 1 clove, minced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 teaspoon
  • Toasted sesame seeds - 1 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste

Steps

  1. Wash the fresh spinach thoroughly under cold water and drain well.
  2. In a large pot, bring water to a boil and add a pinch of salt.
  3. Blanch the spinach in the boiling water for about 1-2 minutes until wilted, then immediately transfer it to a bowl of ice water to stop the cooking process.
  4. Once cooled, drain the spinach again and gently squeeze out excess water.
  5. In a mixing bowl, combine the minced garlic, sesame oil, soy sauce, rice vinegar, red pepper flakes, and salt to create the dressing.
  6. Add the drained spinach to the bowl and toss to coat evenly with the dressing.
  7. Sprinkle the toasted sesame seeds on top and mix gently.
  8. Serve immediately or refrigerate for 30 minutes to enhance the flavors before serving.
