- Shrimp - 100 grams, peeled and deveined
- Squid - 100 grams, cleaned and cut into rings
- Fish (white fish like cod or tilapia) - 100 grams, cut into small pieces
- Olive oil - 2 tablespoons for cooking
- Sesame oil - 1 tablespoon for flavor
Steps
- In a large mixing bowl, combine the almond flour, coconut flour, salt, and black pepper.
- In another bowl, whisk the eggs and water together until well combined.
- Pour the egg mixture into the flour mixture and stir until a smooth batter forms.
- Fold in the chopped green onions, shrimp, squid, and fish pieces into the batter until evenly coated.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Once the oil is hot, pour half of the batter into the skillet, spreading it evenly to form a pancake.
- Cook for about 4-5 minutes on one side or until golden brown, then carefully flip and cook for another 4-5 minutes on the other side.
- Remove the pancake from the skillet and keep warm. Repeat with the remaining batter, adding more oil as needed.
- Drizzle the finished pancakes with sesame oil before serving.
