Ingredients

  • Cooked white rice - 1 cup
  • Cooked quinoa - 1/2 cup
  • Shrimp, peeled and deveined - 100 grams
  • Squid, cleaned and sliced - 100 grams
  • Carrot, julienned - 1 small
  • Zucchini, julienned - 1 small
  • Spinach - 1 cup
  • Eggs - 2
  • Soy sauce (kosher) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame seeds - 1 teaspoon
  • Green onions, sliced - 2 stalks

Steps

  1. Prepare the rice and quinoa according to package instructions and set aside.
  2. In a frying pan, heat 1 tablespoon of vegetable oil over medium heat and add minced garlic. Sauté until fragrant, about 30 seconds.
  3. Add the shrimp and squid to the pan and cook until the shrimp turns pink and the squid is tender, about 3-4 minutes. Remove from the pan and set aside.
  4. In the same pan, add the carrot and zucchini. Sauté for 3-4 minutes until slightly tender, then add the spinach and cook until wilted, about 2 minutes. Season with 1 tablespoon of soy sauce and mix well.
  5. In a separate pan, heat 1 tablespoon of sesame oil over medium heat. Crack the eggs into the pan and fry them sunny-side up until the whites are set but the yolks are still runny.
  6. To assemble the bibimbap, divide the cooked rice and quinoa between two bowls, then arrange the sautéed vegetables and seafood attractively on top.
  7. Place a fried egg on each bowl, drizzle with gochujang, and sprinkle with sesame seeds and sliced green onions.
  8. Serve immediately, mixing all ingredients together before eating for the best flavor.
