- Short-grain rice - 100 grams
- Water - 800 milliliters
- Vegetable broth - 200 milliliters
- Carrot - 50 grams, diced
- Zucchini - 50 grams, diced
- Mushrooms (shiitake or button) - 50 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks, chopped
- Eggs - 2 (optional, for topping)
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, combine the soaked rice, 800ml of water, and vegetable broth. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 20 minutes, stirring occasionally, until the rice is very soft and the mixture starts to thicken.
- Add the diced carrot, zucchini, sliced mushrooms, and minced garlic to the pot. Continue to simmer for another 5-10 minutes until the vegetables are tender.
- Stir in the soy sauce, sesame oil, salt, and black pepper to taste. Adjust the seasoning as necessary.
- If using, poach or fry the eggs in a separate pan to your desired doneness.
- Serve the porridge hot in bowls, topped with chopped green onions and a poached or fried egg if desired.
