Ingredients

  • Short-grain rice - 100 grams
  • Water - 800 milliliters
  • Vegetable broth - 200 milliliters
  • Carrot - 50 grams, diced
  • Zucchini - 50 grams, diced
  • Mushrooms (shiitake or button) - 50 grams, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks, chopped
  • Eggs - 2 (optional, for topping)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, combine the soaked rice, 800ml of water, and vegetable broth. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer for about 20 minutes, stirring occasionally, until the rice is very soft and the mixture starts to thicken.
  4. Add the diced carrot, zucchini, sliced mushrooms, and minced garlic to the pot. Continue to simmer for another 5-10 minutes until the vegetables are tender.
  5. Stir in the soy sauce, sesame oil, salt, and black pepper to taste. Adjust the seasoning as necessary.
  6. If using, poach or fry the eggs in a separate pan to your desired doneness.
  7. Serve the porridge hot in bowls, topped with chopped green onions and a poached or fried egg if desired.
