- Short-grain rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Cooked chicken breast, shredded - 100g
- Green onions, finely chopped - 2 tablespoons
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Egg - 1 large
- Cornstarch - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the rice and place it in a pot with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and cook for about 15 minutes until the rice is tender and water is absorbed.
- In a mixing bowl, combine the cooked rice, shredded chicken, chopped green onions, soy sauce, sesame oil, egg, cornstarch, salt, and black pepper. Mix well until fully combined.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a small amount of oil.
- Spoon the rice mixture into the skillet, forming small cakes about 1/2 inch thick. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove the rice cakes from the skillet and sprinkle with sesame seeds before serving.
