Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Cooked chicken breast, shredded - 100g
  • Green onions, finely chopped - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Egg - 1 large
  • Cornstarch - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the rice and place it in a pot with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and cook for about 15 minutes until the rice is tender and water is absorbed.
  3. In a mixing bowl, combine the cooked rice, shredded chicken, chopped green onions, soy sauce, sesame oil, egg, cornstarch, salt, and black pepper. Mix well until fully combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a small amount of oil.
  5. Spoon the rice mixture into the skillet, forming small cakes about 1/2 inch thick. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove the rice cakes from the skillet and sprinkle with sesame seeds before serving.
