Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 1 cup (240ml)
  • Carrot - 1 small, grated
  • Green onion - 2 stalks, finely chopped
  • Zucchini - 1 small, grated
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Egg - 1 large
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Cooking oil - for frying

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and blend it with 1 cup of water in a blender until smooth.
  3. In a mixing bowl, combine the rice batter with grated carrot, chopped green onion, grated zucchini, soy sauce, sesame oil, egg, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  4. Heat a non-stick frying pan over medium heat and add a small amount of cooking oil, enough to coat the bottom.
  5. Pour half of the rice mixture into the pan, spreading it evenly to form a pancake approximately 1 cm thick.
  6. Cook for about 5-7 minutes or until the bottom is golden brown, then carefully flip it over and cook for an additional 5-7 minutes on the other side.
  7. Repeat the process with the remaining batter to make a second rice cake.
  8. Once cooked, slice the rice cakes into wedges and serve warm, optionally with extra soy sauce for dipping.
