  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Black sesame seeds - 1 tablespoon, for garnish
  • Green onions - 2, chopped for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add chopped onion, garlic, and ginger, and sauté until the onion is translucent.
  2. Add diced pumpkin, carrot, potato, and zucchini to the pot, stirring well to combine with the sautéed aromatics.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and cover the pot.
  4. Cook for about 20 minutes or until the vegetables are tender.
  5. Stir in soy sauce and gochujang, adjusting the seasoning with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Remove from heat and let it sit for a few minutes. Serve hot, garnished with black sesame seeds and chopped green onions.
