Ingredients

  • whole wheat flour - 100 grams
  • pumpkin puree - 100 grams
  • eggs - 2 large
  • Greek yogurt - 50 grams
  • milk - 100 milliliters
  • green onions - 2 tablespoons, chopped
  • soy sauce - 1 tablespoon
  • gochujang (Korean chili paste) - 1 teaspoon
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • sesame seeds - for garnish
  • oil - for frying

Steps

  1. In a mixing bowl, combine the whole wheat flour, baking powder, and salt.
  2. In another bowl, whisk together the pumpkin puree, eggs, Greek yogurt, milk, soy sauce, and gochujang until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped green onions.
  4. Heat a non-stick skillet over medium heat and add a small amount of oil.
  5. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 3-4 minutes on one side, or until bubbles form on the surface.
