- whole wheat flour - 100 grams
- pumpkin puree - 100 grams
- eggs - 2 large
- Greek yogurt - 50 grams
- milk - 100 milliliters
- green onions - 2 tablespoons, chopped
- soy sauce - 1 tablespoon
- gochujang (Korean chili paste) - 1 teaspoon
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- sesame seeds - for garnish
- oil - for frying
Steps
- In a mixing bowl, combine the whole wheat flour, baking powder, and salt.
- In another bowl, whisk together the pumpkin puree, eggs, Greek yogurt, milk, soy sauce, and gochujang until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped green onions.
- Heat a non-stick skillet over medium heat and add a small amount of oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 3-4 minutes on one side, or until bubbles form on the surface.
