- Baking powder - 1 teaspoon

- Salt - 1/2 teaspoon
- Egg - 1 large
- Greek yogurt - 100 grams
- Korean chili paste (gochujang) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Chopped scallions - 30 grams
- Grated zucchini - 50 grams
- Shredded carrots - 30 grams
- Cooked kimchi, chopped - 50 grams
- Chopped cilantro - 10 grams
Steps
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, whisk together the whole wheat flour, brown rice flour, baking powder, baking soda, and salt.
- In another bowl, beat the egg and mix in the Greek yogurt, gochujang, and sesame oil until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the chopped scallions, grated zucchini, shredded carrots, chopped kimchi, and cilantro until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
