  • Brown rice flour - 50 grams
  • Baking powder - 1 teaspoon
  • Baking soda - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Egg - 1 large
  • Greek yogurt - 100 grams
  • Korean chili paste (gochujang) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Chopped scallions - 30 grams
  • Grated zucchini - 50 grams
  • Shredded carrots - 30 grams
  • Cooked kimchi, chopped - 50 grams
  • Chopped cilantro - 10 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, brown rice flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the egg and mix in the Greek yogurt, gochujang, and sesame oil until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the chopped scallions, grated zucchini, shredded carrots, chopped kimchi, and cilantro until evenly distributed.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
