- Eggs - 4 large
- Spinach - 50 grams, chopped
- Carrot - 30 grams, grated
- Green onion - 2 stalks, finely chopped
- Mushrooms - 50 grams, diced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 30 grams, shredded (optional)
Steps
- Preheat the oven to 180°C (350°F) and grease a muffin tin with cooking spray.
- In a mixing bowl, crack the eggs and beat them until well combined.
- Add the chopped spinach, grated carrot, diced mushrooms, chopped green onion, soy sauce, sesame oil, salt, and black pepper to the beaten eggs, and mix until all ingredients are evenly incorporated.
- If using, fold in the shredded cheddar cheese for added flavor.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes or until the muffins are set and slightly golden on top.
- Remove from the oven and let them cool for a few minutes before gently removing the muffins from the tin.
- Serve warm or store in an airtight container in the refrigerator for up to 3 days.
