Ingredients

  • Cornish hen - 1 (about 500g)
  • Glutinous rice - 100g
  • Ginseng root - 10g (or 1-2 ginseng slices)
  • Garlic - 5 cloves, peeled
  • Ginger - 10g, sliced
  • Green onion - 2, cut into 5 cm pieces
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1.5 liters
  • Sesame oil - 1 tablespoon

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a large pot, combine the soaked rice, Cornish hen, ginseng, garlic, ginger, and water.
  3. Bring the pot to a boil over high heat, then reduce to a simmer and cover. Cook for about 1 hour.
  4. After 1 hour, add the green onion and continue to simmer for another 30 minutes, or until the chicken is tender.
  5. Remove the chicken from the pot and let it cool slightly. Shred the meat, discarding the skin and bones.
  6. Return the shredded chicken to the soup, season with salt and black pepper to taste, and drizzle with sesame oil.
  7. Serve hot, garnished with additional green onions if desired.
