Ingredients
- Cornish hen - 1 (about 500g)
- Glutinous rice - 100g
- Ginseng root - 10g (or 1-2 ginseng slices)
- Garlic - 5 cloves, peeled
- Ginger - 10g, sliced
- Green onion - 2, cut into 5 cm pieces
- Salt - to taste
- Black pepper - to taste
- Water - 1.5 liters
- Sesame oil - 1 tablespoon
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- In a large pot, combine the soaked rice, Cornish hen, ginseng, garlic, ginger, and water.
- Bring the pot to a boil over high heat, then reduce to a simmer and cover. Cook for about 1 hour.
- After 1 hour, add the green onion and continue to simmer for another 30 minutes, or until the chicken is tender.
- Remove the chicken from the pot and let it cool slightly. Shred the meat, discarding the skin and bones.
- Return the shredded chicken to the soup, season with salt and black pepper to taste, and drizzle with sesame oil.
- Serve hot, garnished with additional green onions if desired.
