  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Shredded carrots - 1/2 cup (60 grams)
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 4 large
  • Sesame seeds - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sriracha sauce - for serving (optional)

Steps

  1. Preheat a grill pan or skillet over medium-high heat.
  2. Season the pork belly with salt and black pepper, then grill for about 4-5 minutes on each side until cooked through and crispy.
  3. While the pork is cooking, heat sesame oil in a pan over medium heat and add minced garlic. Sauté until fragrant.
  4. Add the cooked brown rice to the pan and stir-fry for about 2-3 minutes, mixing well with the garlic.
  5. Stir in the soy sauce and chopped green onions, and cook for an additional 1-2 minutes.
  6. Remove the pork belly from the grill and let it rest for a few minutes before slicing it into thin strips.
  7. To serve, place a scoop of the seasoned rice on each plate, top with sliced pork belly, shredded carrots, and cucumber.
  8. Garnish with sesame seeds and serve with lettuce leaves for wrapping, along with Sriracha sauce if desired.
