- Pork belly - 250 grams
- Cooked white rice - 2 cups
- Baby spinach - 100 grams
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Egg - 1 large
- Gochujang (Korean chili paste) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - to taste
- Pepper - to taste
- Sesame seeds - 1 tablespoon
Steps
- Preheat a grill or a non-stick skillet over medium heat.
- Season the pork belly with salt, pepper, and minced garlic.
- Grill the pork belly for about 5-7 minutes on each side, or until cooked through and crispy.
- In a separate pan, sauté the spinach with a splash of sesame oil until wilted, about 2-3 minutes. Season with a pinch of salt.
- In the same pan, add a little more sesame oil and stir-fry the julienned carrot and zucchini for about 3-4 minutes until tender-crisp. Season with salt and pepper.
- Fry the egg sunny-side up in a bit of oil until the whites are set but the yolk is still runny.
- To assemble, divide the cooked rice between two bowls.
- Arrange the sautéed spinach, carrots, zucchini, and grilled pork belly on top of the rice.
- Place the fried egg in the center and drizzle with gochujang and a sprinkle of sesame seeds.
- Serve immediately, mixing everything together before eating.
