Ingredients
- Cooked sushi rice - 200 grams
- Nori sheets - 4 sheets
- Shrimp (peeled and deveined) - 150 grams
- Carrot (julienned) - 1 medium
- Cucumber (julienned) - 1 medium
- Spinach - 100 grams
- Sesame oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black sesame seeds - 1 tablespoon
Steps
- Cook sushi rice according to package instructions and let it cool slightly.
- In a pan, heat 1 tablespoon of sesame oil and stir-fry the shrimp until pink and cooked through, about 3-4 minutes. Add soy sauce and salt, then set aside.
- In the same pan, add a little more sesame oil, and sauté the spinach until wilted, about 2 minutes. Set aside to cool.
- Prepare the vegetables by julienning the carrot and cucumber.
- On a bamboo mat, lay one sheet of nori shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 2 cm border at the top.
- Place a line of sautéed spinach, shrimp, carrots, and cucumber in the center of the rice.
- Carefully roll the nori away from you, using the mat to help keep the filling tight, until you reach the border. Wet the edge of the nori with a little water to seal the roll.
- Repeat the process with the remaining nori sheets and filling ingredients.
- Once all rolls are made, slice them into bite-sized pieces and sprinkle with black sesame seeds before serving.
