Saeu Kimbap

Saeu Kimbap is a delightful Korean dish featuring seasoned shrimp wrapped in seaweed and rice, making it a perfect handheld meal. This dairy-free version retains all the authentic flavors while being light and nutritious.

Ingredients

  • Cooked sushi rice - 200 grams
  • Nori sheets - 4 sheets
  • Shrimp (peeled and deveined) - 150 grams
  • Carrot (julienned) - 1 medium
  • Cucumber (julienned) - 1 medium
  • Spinach - 100 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black sesame seeds - 1 tablespoon

Steps

  1. Cook sushi rice according to package instructions and let it cool slightly.
  2. In a pan, heat 1 tablespoon of sesame oil and stir-fry the shrimp until pink and cooked through, about 3-4 minutes. Add soy sauce and salt, then set aside.
  3. In the same pan, add a little more sesame oil, and sauté the spinach until wilted, about 2 minutes. Set aside to cool.
  4. Prepare the vegetables by julienning the carrot and cucumber.
  5. On a bamboo mat, lay one sheet of nori shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 2 cm border at the top.
  6. Place a line of sautéed spinach, shrimp, carrots, and cucumber in the center of the rice.
  7. Carefully roll the nori away from you, using the mat to help keep the filling tight, until you reach the border. Wet the edge of the nori with a little water to seal the roll.
  8. Repeat the process with the remaining nori sheets and filling ingredients.
  9. Once all rolls are made, slice them into bite-sized pieces and sprinkle with black sesame seeds before serving.
