Ingredients

  • Small shrimp - 200 grams
  • Salt - 50 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, finely chopped
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Sesame oil - 1 tablespoon

Steps

  1. In a bowl, combine the small shrimp and salt, ensuring the shrimp are well coated. Let it sit for 15 minutes to allow the salt to draw out moisture.
  2. After 15 minutes, rinse the shrimp under cold water and drain well.
  3. In a separate bowl, mix the minced garlic, ginger, chopped green onions, gochugaru, and sesame oil.
  4. Add the rinsed shrimp to the mixture and stir thoroughly until the shrimp are evenly coated with the seasoning.
  5. Transfer the shrimp mixture to a clean glass jar, pressing down to remove air pockets. Seal the jar tightly.
  6. Let the jar sit at room temperature for 1-2 days for fermentation, then transfer it to the refrigerator. It can be consumed after 2 days and will improve in flavor over time.
