- Zucchini (grated) - 100 grams
- Carrot (grated) - 50 grams
- Green onion (chopped) - 2 stalks
- Egg - 1 large
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the peeled and deveined shrimp, grated zucchini, grated carrot, and chopped green onion.
- Add the egg, all-purpose flour, cornstarch, salt, and black pepper to the bowl, and mix until all ingredients are well combined.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
- Scoop about 1/4 cup of the shrimp mixture into the skillet, flattening it slightly to form a pancake.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed for additional pancakes.
- Repeat the process until all the mixture is used, adding oil to the skillet as necessary.
- Serve hot with a dipping sauce made of soy sauce and vinegar, if desired.
