Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Zucchini (grated) - 100 grams
  • Carrot (grated) - 50 grams
  • Green onion (chopped) - 2 stalks
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the peeled and deveined shrimp, grated zucchini, grated carrot, and chopped green onion.
  2. Add the egg, all-purpose flour, cornstarch, salt, and black pepper to the bowl, and mix until all ingredients are well combined.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
  4. Scoop about 1/4 cup of the shrimp mixture into the skillet, flattening it slightly to form a pancake.
  5. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed for additional pancakes.
  6. Repeat the process until all the mixture is used, adding oil to the skillet as necessary.
  7. Serve hot with a dipping sauce made of soy sauce and vinegar, if desired.
