Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Water - 400 milliliters
  • Garlic - 3 cloves, minced
  • Green onion - 2 stalks, chopped
  • Zucchini - 100 grams, sliced
  • Mushrooms - 100 grams, sliced (shiitake or enoki)
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Soy sauce - 1 tablespoon (low sodium if preferred)
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, bring 400 milliliters of water to a boil.
  2. Add the minced garlic and sliced zucchini to the boiling water and simmer for 5 minutes.
  3. Add the sliced mushrooms and cook for an additional 3 minutes until they soften.
  4. Stir in the shrimp, gochugaru, soy sauce, sesame oil, and season with salt and black pepper to taste.
  5. Cook for 5-7 minutes until the shrimp turn pink and are cooked through.
  6. Remove from heat, and stir in the chopped green onion just before serving.
