- Shrimp - 200 grams, peeled and deveined
- Water - 400 milliliters
- Garlic - 3 cloves, minced
- Green onion - 2 stalks, chopped
- Zucchini - 100 grams, sliced
- Mushrooms - 100 grams, sliced (shiitake or enoki)
- Gochugaru (Korean red pepper flakes) - 1 teaspoon
- Soy sauce - 1 tablespoon (low sodium if preferred)
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, bring 400 milliliters of water to a boil.
- Add the minced garlic and sliced zucchini to the boiling water and simmer for 5 minutes.
- Add the sliced mushrooms and cook for an additional 3 minutes until they soften.
- Stir in the shrimp, gochugaru, soy sauce, sesame oil, and season with salt and black pepper to taste.
- Cook for 5-7 minutes until the shrimp turn pink and are cooked through.
- Remove from heat, and stir in the chopped green onion just before serving.
