- Gochujang (Korean chili paste) - 2 tablespoons
- Mayonnaise - 2 tablespoons

Steps
- In a bowl, combine the sliced radishes, cucumber, grated carrot, green onions, soy sauce, sesame oil, rice vinegar, sugar, salt, and black pepper. Mix well and let it marinate for 10 minutes.
- In a skillet over medium heat, sauté the chopped mushrooms for about 5 minutes until they release moisture and become tender. Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed mushrooms, cooked quinoa, breadcrumbs, and the beaten egg. Mix well to form a patty mixture. Season with salt and pepper to taste.
- Form the mixture into two patties and heat a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
- To prepare the sauce, mix gochujang and mayonnaise in a small bowl until well blended.
- To assemble the burgers, place a lettuce leaf on each bun, add the mushroom patty, top with the radish salad, and drizzle with gochujang mayo. Close the buns and serve immediately.
