- Buckwheat noodles - 200 grams
- Beef brisket - 150 grams
- Water - 1 liter
- Soy sauce - 2 tablespoons
- Vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Sugar - 1 teaspoon
- Cucumber - 1 small, julienned
- Radish - 50 grams, thinly sliced
- Boiled egg - 1, halved
- Korean mustard - 1 teaspoon
- Sesame seeds - 1 teaspoon
- Green onion - 1, chopped
Steps
- In a pot, bring 1 liter of water to a boil. Add the beef brisket and cook for about 30 minutes until tender. Remove the beef and set aside, reserving the broth.
- In the same pot, cook the buckwheat noodles according to package instructions (usually about 6-8 minutes). Once cooked, drain and rinse under cold water to stop the cooking process.
- In a bowl, mix the reserved broth with soy sauce, vinegar, sesame oil, and sugar to create the naengmyeon sauce.
- To serve, divide the cold noodles into two bowls and pour the chilled broth over them.
- Top each bowl with julienned cucumber, sliced radish, a halved boiled egg, a dollop of Korean mustard, and sprinkle with sesame seeds and chopped green onion.
