Ingredients

  • Buckwheat noodles - 200 grams
  • Beef brisket - 150 grams
  • Water - 1 liter
  • Soy sauce - 2 tablespoons
  • Vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Cucumber - 1 small, julienned
  • Radish - 50 grams, thinly sliced
  • Boiled egg - 1, halved
  • Korean mustard - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Green onion - 1, chopped

Steps

  1. In a pot, bring 1 liter of water to a boil. Add the beef brisket and cook for about 30 minutes until tender. Remove the beef and set aside, reserving the broth.
  2. In the same pot, cook the buckwheat noodles according to package instructions (usually about 6-8 minutes). Once cooked, drain and rinse under cold water to stop the cooking process.
  3. In a bowl, mix the reserved broth with soy sauce, vinegar, sesame oil, and sugar to create the naengmyeon sauce.
  4. To serve, divide the cold noodles into two bowls and pour the chilled broth over them.
  5. Top each bowl with julienned cucumber, sliced radish, a halved boiled egg, a dollop of Korean mustard, and sprinkle with sesame seeds and chopped green onion.
