Ingredients

  • Short-grain rice - 1 cup (200g)
  • Pumpkin, peeled and cubed - 200g
  • Water - 2 cups (500ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic, minced - 2 cloves
  • Green onion, chopped - 2 stalks
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 teaspoon (optional) for garnish

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. While the rice is soaking, steam or boil the pumpkin cubes until they are tender, about 10-15 minutes. Drain and set aside.
  3. In a pot, combine the soaked rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and the water is absorbed.
  4. In a large mixing bowl, combine the cooked rice, steamed pumpkin, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix until well combined and the pumpkin is slightly mashed into the rice.
  5. Serve the pumpkin rice warm, garnished with chopped green onions and sesame seeds if desired.
