- Pumpkin, peeled and cubed - 200 grams
- Glutinous rice (sweet rice) - 100 grams
- Water - 700 ml
- Salt - 1/4 teaspoon
- Sugar (optional) - 1 tablespoon
- Sesame seeds, toasted - 1 tablespoon
- Cinnamon powder - 1/2 teaspoon
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 2 hours or overnight.
- In a pot, combine the soaked rice and 700 ml of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and add the cubed pumpkin and salt. Cover and simmer for about 20 minutes, or until the pumpkin is soft and the rice is cooked through.
- Stir the mixture occasionally to prevent sticking, and mash some of the pumpkin cubes to create a creamy texture while leaving some chunks for added texture.
- Taste the porridge and add sugar if desired for extra sweetness. Adjust the consistency with additional water if needed.
- Remove from heat and let it sit for a few minutes to thicken. Serve warm, garnished with toasted sesame seeds and a sprinkle of cinnamon.
