- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Gochugaru (Korean red pepper flakes) - 1 teaspoon
- Sesame oil - 1 tablespoon
- Water - 250 ml
Steps
- Start by scoring the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
- Rub the pork belly with salt, black pepper, garlic powder, and gochugaru, ensuring an even coating over the skin and meat.
- Place the seasoned pork belly in a pot and add water. Cover and simmer over low heat for about 60 minutes until the pork is tender.
- Remove the pork belly from the pot and let it cool slightly, then pat the skin dry with paper towels.
- Heat sesame oil in a deep frying pan over medium-high heat. Once hot, carefully add the pork belly, skin side down.
- Fry the pork belly for about 10-15 minutes, or until the skin is crispy and golden brown. Flip the pork to crisp the meat side for an additional 5 minutes.
- Remove from the heat, let it cool for a few minutes, then cut into bite-sized cracklings.
