- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms, zucchini, carrot, and red bell pepper to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender.
- In a small bowl, mix together gochujang, soy sauce, and sesame oil to create the sauce.
- Add the cooked spaghetti to the skillet with the vegetables, then pour the sauce over the mixture. Toss everything together for 2-3 minutes until well combined and heated through.
- Season with salt and black pepper to taste. Remove from heat.
- Serve the pasta in bowls, garnished with chopped green onions and a sprinkle of sesame seeds.
