Ingredients

  • Almond flour - 100 grams

  • Red bell pepper - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Sesame oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, salt, and black pepper.
  2. In a separate bowl, whisk the eggs and water together until well combined.
  3. Slowly pour the egg mixture into the flour mixture, stirring until a smooth batter forms.
  4. Add the chopped green onions, julienned carrot, diced red bell pepper, and minced garlic to the batter, mixing until evenly distributed.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  6. Pour half of the batter into the skillet, spreading it evenly to form a round pizza shape.
  7. Cook for about 5-7 minutes, or until the bottom is golden brown and the edges start to crisp.
  8. Carefully flip the pajeon using a spatula and cook for an additional 5-7 minutes on the other side until golden brown.
  9. Remove from the skillet and repeat the process with the remaining batter, adding another tablespoon of olive oil if necessary.
  10. Drizzle sesame oil on top of the cooked pajeon before slicing into wedges and serving hot.
