- All-purpose flour - 100 grams
- Rice flour - 50 grams
- Water - 200 milliliters
- Salt - 1/2 teaspoon
- Green onions - 100 grams, chopped
- Carrot - 1 small, julienned
- Zucchini - 1 small, julienned
- Vegetable oil - 3 tablespoons
- Soy sauce - 2 tablespoons (for dipping)
Steps
- In a mixing bowl, combine the all-purpose flour, rice flour, water, and salt to create a smooth batter.
- Add the chopped green onions, julienned carrot, and zucchini into the batter and mix well.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour half of the batter mixture into the skillet, spreading it evenly to form a pancake.
- Cook for about 4-5 minutes until the edges become crispy and the bottom is golden brown.
- Flip the pancake carefully and cook for another 4-5 minutes until the other side is also golden brown.
- Remove the pancake from the skillet and repeat with the remaining batter, adding more oil as needed.
- Cut the pajeon into wedges and serve hot with soy sauce for dipping.
