Ingredients

  • All-purpose flour - 100 grams
  • Rice flour - 50 grams
  • Water - 200 milliliters
  • Salt - 1/2 teaspoon
  • Green onions - 100 grams, chopped
  • Carrot - 1 small, julienned
  • Zucchini - 1 small, julienned
  • Vegetable oil - 3 tablespoons
  • Soy sauce - 2 tablespoons (for dipping)

Steps

  1. In a mixing bowl, combine the all-purpose flour, rice flour, water, and salt to create a smooth batter.
  2. Add the chopped green onions, julienned carrot, and zucchini into the batter and mix well.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  4. Pour half of the batter mixture into the skillet, spreading it evenly to form a pancake.
  5. Cook for about 4-5 minutes until the edges become crispy and the bottom is golden brown.
  6. Flip the pancake carefully and cook for another 4-5 minutes until the other side is also golden brown.
  7. Remove the pancake from the skillet and repeat with the remaining batter, adding more oil as needed.
  8. Cut the pajeon into wedges and serve hot with soy sauce for dipping.
