- Carrots - 50 grams, finely diced
- Bell pepper - 50 grams, finely diced
Steps
- Rice the cauliflower by pulsing it in a food processor until it resembles rice grains.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced carrots and bell pepper to the skillet and cook for 3-4 minutes until softened.
- Stir in the riced cauliflower and soy sauce, cooking for another 5-7 minutes until the cauliflower is tender. Season with salt and pepper to taste. Remove from heat and set aside.
- In a bowl, beat the eggs and stir in the chopped green onions, salt, and pepper.
- In another skillet, heat sesame oil over medium-low heat. Pour in the egg mixture, tilting the pan to ensure an even layer.
- Cook for 3-4 minutes until the edges start to set and the top is still slightly runny.
- Carefully place half of the cauliflower rice mixture onto one half of the omelette and fold the other half over the filling.
- Cook for another 1-2 minutes until the omelette is fully set. Repeat with the remaining ingredients for the second serving.
- Serve hot, garnished with additional green onions if desired.
