Ingredients

  • Cauliflower - 300 grams
  • Eggs - 4 large
  • Green onions - 2 stalks, finely chopped

  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Carrots - 50 grams, finely diced
  • Bell pepper - 50 grams, finely diced

Steps

  1. Rice the cauliflower by pulsing it in a food processor until it resembles rice grains.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrots and bell pepper to the skillet and cook for 3-4 minutes until softened.
  4. Stir in the riced cauliflower and soy sauce, cooking for another 5-7 minutes until the cauliflower is tender. Season with salt and pepper to taste. Remove from heat and set aside.
  5. In a bowl, beat the eggs and stir in the chopped green onions, salt, and pepper.
  6. In another skillet, heat sesame oil over medium-low heat. Pour in the egg mixture, tilting the pan to ensure an even layer.
  7. Cook for 3-4 minutes until the edges start to set and the top is still slightly runny.
  8. Carefully place half of the cauliflower rice mixture onto one half of the omelette and fold the other half over the filling.
  9. Cook for another 1-2 minutes until the omelette is fully set. Repeat with the remaining ingredients for the second serving.
  10. Serve hot, garnished with additional green onions if desired.
