Ingredients

  • cooked rice - 1 cup
  • chicken breast, diced - 100 grams
  • carrot, finely chopped - 1/4 cup
  • green peas - 1/4 cup
  • onion, finely chopped - 1/4 cup
  • vegetable oil - 2 tablespoons
  • ketchup - 2 tablespoons
  • soy sauce (gluten-free) - 1 tablespoon
  • salt - 1/4 teaspoon
  • black pepper - 1/4 teaspoon
  • eggs - 4 large
  • milk - 2 tablespoons
  • chopped green onions - 2 tablespoons

Steps

  1. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes.
  2. Add the chopped onion, carrot, and green peas to the skillet. Sauté for another 5 minutes until the vegetables are tender.
  3. Stir in the cooked rice, ketchup, soy sauce, salt, and black pepper. Mix well and cook for an additional 3-4 minutes until heated through. Remove from heat and set aside.
  4. In a bowl, whisk together the eggs and milk until well combined. Season with a pinch of salt.
  5. In a separate non-stick pan, heat the remaining tablespoon of vegetable oil over medium-low heat. Pour half of the egg mixture into the pan, swirling to cover the bottom evenly.
  6. Cook for about 2-3 minutes until the edges start to set but the center is still slightly runny. Place half of the rice mixture onto one side of the omelet.
  7. Using a spatula, carefully fold the omelet over the rice. Cook for another minute, then slide the omelet onto a plate, seam side down.
  8. Repeat the process with the remaining egg mixture and rice. Garnish with chopped green onions and additional ketchup if desired.
