Ingredients

  • Korean cucumbers - 2 medium (approximately 300 grams)
  • Salt - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Vinegar (preferably rice vinegar) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Green onions - 1 stalk, finely chopped

Steps

  1. Wash the cucumbers thoroughly and slice them thinly, either into rounds or half-moons.
  2. In a bowl, sprinkle the sliced cucumbers with salt and mix well. Let them sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, rinse the cucumbers under cold water and drain thoroughly.
  4. In a separate bowl, combine the minced garlic, gochugaru, sugar, soy sauce, vinegar, and sesame oil. Mix until the sugar is dissolved.
  5. Add the drained cucumbers to the dressing and toss until well coated.
  6. Sprinkle sesame seeds and chopped green onions over the top, then give it a final toss.
  7. Serve immediately or refrigerate for 15-30 minutes for a cooler, more flavorful dish.
