Ingredients
- Short-grain glutinous rice - 1 cup
- Water - 4 cups
- Silken tofu - 200 grams
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Salt - 1 teaspoon
- Black pepper - to taste
- Soy sauce (gluten-free) - 1 tablespoon
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the short-grain glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain.
- In a medium pot, combine the soaked rice and 4 cups of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low and simmer, uncovered, for about 30 minutes, stirring occasionally until the rice is soft and the porridge is thickened.
- While the rice is cooking, in a small pan, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the silken tofu to the rice porridge, gently breaking it into pieces. Stir in the sautéed garlic and ginger mixture.
- Season the porridge with salt, black pepper, and gluten-free soy sauce, adjusting to taste.
- Continue to cook for another 5 minutes, allowing the flavors to meld and the porridge to thicken further.
- Serve hot, garnished with chopped green onions and sesame seeds.
