Ingredients

  • Short-grain glutinous rice - 1 cup
  • Water - 4 cups
  • Silken tofu - 200 grams
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the short-grain glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain.
  2. In a medium pot, combine the soaked rice and 4 cups of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and simmer, uncovered, for about 30 minutes, stirring occasionally until the rice is soft and the porridge is thickened.
  4. While the rice is cooking, in a small pan, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  5. Add the silken tofu to the rice porridge, gently breaking it into pieces. Stir in the sautéed garlic and ginger mixture.
  6. Season the porridge with salt, black pepper, and gluten-free soy sauce, adjusting to taste.
  7. Continue to cook for another 5 minutes, allowing the flavors to meld and the porridge to thicken further.
  8. Serve hot, garnished with chopped green onions and sesame seeds.
