Ingredients

  • Cucumber - 100 grams
  • Carrot - 50 grams
  • Daikon radish - 100 grams
  • Nuka (rice bran) - 200 grams
  • Salt - 15 grams
  • Water - 200 ml
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon, grated

Steps

  1. In a bowl, mix the rice bran (nuka) with salt and water to create a thick paste.
  2. Grate the garlic and ginger, and add them to the rice bran mixture, stirring well.
  3. Wash and cut the cucumber, carrot, and daikon radish into thin slices or sticks.
  4. In a clean jar, layer the vegetable slices with the rice bran mixture, pressing down to ensure the vegetables are well coated.
  5. Seal the jar and leave it at room temperature for 24-48 hours to ferment, depending on your taste preference.
  6. After fermentation, refrigerate the Nukazuke for at least 1 hour before serving for the best flavor.
