- Cucumber - 100 grams
- Carrot - 50 grams
- Daikon radish - 100 grams
- Nuka (rice bran) - 200 grams
- Salt - 15 grams
- Water - 200 ml
- Garlic - 2 cloves
- Ginger - 1 teaspoon, grated
Steps
- In a bowl, mix the rice bran (nuka) with salt and water to create a thick paste.
- Grate the garlic and ginger, and add them to the rice bran mixture, stirring well.
- Wash and cut the cucumber, carrot, and daikon radish into thin slices or sticks.
- In a clean jar, layer the vegetable slices with the rice bran mixture, pressing down to ensure the vegetables are well coated.
- Seal the jar and leave it at room temperature for 24-48 hours to ferment, depending on your taste preference.
- After fermentation, refrigerate the Nukazuke for at least 1 hour before serving for the best flavor.
